Ingredients
  

Zucchini Base
  • 2 medium zucchini grated and excess moisture squeezed out
  • 1 cup shredded mozzarella cheese
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Topping
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley chopped

Method
 

Prepare the Oven and Baking Sheet
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the grated zucchini, mozzarella cheese, egg, flour, garlic powder, salt, and pepper.
Mix and Shape the Dough
  1. Mix until well combined and a dough forms.
  2. Spread the mixture onto the prepared baking sheet, shaping it into a rectangle about 1/2 inch thick.
Bake the Breadsticks
  1. Bake in the preheated oven for 20 minutes or until golden brown.
  2. Remove from the oven and sprinkle with Parmesan cheese and chopped parsley.
Cool and Serve
  1. Let the breadsticks cool for a few minutes before cutting into strips.
  2. Serve warm with marinara sauce or your favorite dip.
