Ingredients
  

Chicken and Gravy
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup chicken broth low sodium
  • 1 cup milk whole or 2%
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 2 tablespoons olive oil
Mashed Potatoes
  • 2 pounds russet potatoes peeled and cubed
  • 1/2 cup butter unsalted
  • 1/2 cup milk whole or 2%
  • 1 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Mashed Potatoes
  1. Boil the cubed potatoes in a large pot of salted water until tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot.
  3. Add butter, milk, salt, and pepper to the potatoes. Mash until smooth and creamy.
Cook the Chicken
  1. Heat olive oil in a skillet over medium heat. Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
  2. Cook the chicken in the skillet for about 6-7 minutes on each side, or until fully cooked and golden brown.
  3. Remove the chicken from the skillet and set aside.
Make the Gravy
  1. In the same skillet, whisk in the flour and cook for 1 minute.
  2. Gradually add the chicken broth and milk, stirring constantly until the gravy thickens, about 5-7 minutes.
  3. Slice the cooked chicken and return it to the skillet, coating it with the gravy.
Serve
  1. Spoon the mashed potatoes onto plates, top with the chicken and gravy, and serve hot.

Notes
