Ingredients
  

Chicken Filling
  • 2 cups cooked chicken shredded or diced
  • 1 medium avocado ripe, mashed
  • 1/4 cup mayonnaise
  • 1 teaspoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Sandwich Assembly
  • 8 slices bread your choice
  • 1 cup cheddar cheese shredded
  • 2 tablespoons butter softened

Method
 

Prepare Chicken Filling
  1. In a bowl, combine the shredded chicken, mashed avocado, mayonnaise, lime juice, salt, and black pepper. Mix well until combined.
  2. Taste and adjust seasoning if necessary.
Assemble Sandwiches
  1. Spread butter on one side of each slice of bread.
  2. On the unbuttered side, place a generous amount of the chicken filling, then top with shredded cheddar cheese.
  3. Top with another slice of bread, buttered side up.
Cook Sandwiches
  1. Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for about 3-4 minutes until golden brown.
  2. Carefully flip the sandwiches and cook for an additional 3-4 minutes until the cheese is melted and the bread is golden brown.
  3. Remove from skillet and let cool for a minute before slicing.
