Ingredients
  

Casserole Base
  • 2 cups Cooked Chicken Shredded
  • 1 cup Cooked Rice White or Brown
  • 1 can Black Beans Drained and rinsed
  • 1 cup Corn Frozen or canned
  • 1 cup Salsa Your choice of spice level
  • 1 cup Shredded Cheese Cheddar or Mexican blend
  • 1 tsp Ground Cumin
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
Toppings
  • 1 cup Shredded Lettuce
  • 1 medium Tomato Diced
  • 1/2 cup Sour Cream
  • 1/4 cup Green Onions Chopped
  • 1/4 cup Cilantro Chopped

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, cooked rice, black beans, corn, salsa, shredded cheese, cumin, chili powder, and garlic powder.
  3. Mix well until all ingredients are evenly combined.
  4. Transfer the mixture into a greased casserole dish and spread it evenly.
Bake the Casserole
  1. Cover the casserole dish with aluminum foil and bake in the preheated oven for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and let it cool for a few minutes.
  2. Top with shredded lettuce, diced tomatoes, sour cream, green onions, and cilantro before serving.
