Prepare the Chicken
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper.
- Add chicken to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
Cook the Vegetables
- In the same skillet, add onions, garlic, carrots, and mushrooms. Sauté for about 5 minutes until softened.
Make the Sauce
- Pour in the Riesling wine and chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
- Stir in the heavy cream and thyme, then return the chicken to the skillet. Simmer for an additional 10 minutes until the sauce thickens.
Serve
- Serve the chicken with the creamy Riesling sauce over rice or pasta, garnished with fresh herbs if desired.
