Ingredients
  

Wet Ingredients
  • 1 cup cooked chickpeas drained and rinsed
  • 1/2 cup peanut butter or almond butter
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
Dry Ingredients
  • 1 cup oats rolled or quick
  • 1/2 cup cocoa powder unsweetened
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips vegan if desired

Method
 

Prepare the Oven
  1. Preheat your oven to 350°F (175°C).
Blend Wet Ingredients
  1. In a food processor, combine the cooked chickpeas, peanut butter, maple syrup, and vanilla extract. Blend until smooth.
Mix Dry Ingredients
  1. In a mixing bowl, combine oats, cocoa powder, baking soda, and salt.
Combine Mixtures
  1. Add the blended wet mixture to the dry ingredients and stir until well combined. Fold in the dark chocolate chips.
Shape Cookies
  1. Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Bake
  1. Bake in the preheated oven for 15-20 minutes, or until the edges are firm.
Cool and Serve
  1. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
