Ingredients
  

Chicken and Marinade
  • 2 cups grilled chicken sliced
  • 2 tablespoons chipotle sauce or to taste
  • 1 teaspoon olive oil
Vegetables
  • 1 cup fresh spinach washed
  • 1 medium tomato sliced
  • 1/2 medium red onion thinly sliced
Bread and Cheese
  • 8 slices ciabatta bread
  • 1 cup pepper jack cheese shredded

Method
 

Prepare the Chicken
  1. In a bowl, mix the grilled chicken with chipotle sauce and olive oil until well coated.
  2. Let the chicken marinate for at least 10 minutes.
Assemble the Panini
  1. Preheat the grill pan over medium heat.
  2. Layer one slice of ciabatta bread with marinated chicken, spinach, tomato, red onion, and pepper jack cheese.
  3. Top with another slice of ciabatta bread.
Grill the Panini
  1. Place the assembled sandwich on the grill pan and press down with a spatula.
  2. Grill for about 5 minutes on each side or until the bread is golden brown and the cheese is melted.
Serve
  1. Remove the panini from the grill, slice in half, and serve warm.
