Ingredients
  

Shrimp
  • 1 pound large shrimp, peeled and deveined
Marinade
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Creamy Slaw
  • 2 cups green cabbage, shredded
  • 1 cup carrots, shredded
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Tacos
  • 8 small corn tortillas
  • 1/4 cup lime wedges for serving

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine cilantro, lime juice, olive oil, garlic, salt, and pepper. Mix well.
Marinate the Shrimp
  1. Add the shrimp to the marinade and let it sit for 15 minutes.
Prepare the Creamy Slaw
  1. In another bowl, combine shredded cabbage, carrots, mayonnaise, lime juice, sugar, salt, and pepper. Mix until well combined.
Cook the Shrimp
  1. Preheat the grill to medium-high heat. Grill the marinated shrimp for about 2-3 minutes on each side until they are opaque and cooked through.
Assemble the Tacos
  1. Warm the corn tortillas on the grill for about 30 seconds on each side. Fill each tortilla with grilled shrimp, top with creamy slaw, avocado slices, and serve with lime wedges.
