Begin by bringing a large pot of salted water to a boil. Add your spaghetti (or chosen pasta) and cook according to package instructions until al dente. Remember, saving about one cup of pasta water before draining is essential.
While the pasta cooks, heat a large skillet over medium heat. Add the chopped bacon and cook until it's crispy and golden brown, which usually takes about 5–7 minutes.
In a mixing bowl, whisk together the eggs and freshly grated Parmesan cheese until well combined. This mixture will become our creamy sauce when combined with hot pasta.
Once your pasta is ready and drained, quickly add it into the skillet with crispy bacon while still hot. Off the heat, pour in the egg and cheese mixture immediately. Stir quickly to ensure the eggs don’t scramble.
If you find the sauce too thick, gradually add in some reserved pasta water until you achieve your desired consistency.
Season with freshly cracked black pepper and salt if needed. Serve your Classic Bacon Carbonara Pasta hot from the skillet for best results.
