Ingredients
  

Chicken and Base Ingredients
  • 1 lb boneless, skinless chicken breasts cubed
  • 4 cups chicken broth
  • 1 cup cream cheese softened
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese for topping
  • 1 cup bacon bits cooked
Vegetables
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup onion diced
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper to taste
  • 1 teaspoon salt to taste

Method
 

Prepare the Chicken
  1. In a large pot, combine the chicken breasts and chicken broth. Bring to a boil.
  2. Reduce heat and simmer for 15 minutes or until chicken is cooked through.
Add Vegetables
  1. Add diced carrots, celery, and onion to the pot. Cook for an additional 10 minutes until vegetables are tender.
Mix in Cream Cheese and Seasoning
  1. Stir in the softened cream cheese and ranch seasoning mix until fully combined.
Finish the Soup
  1. Add garlic powder, salt, and pepper. Stir well and let simmer for another 5 minutes.
  2. Serve hot, topped with shredded cheddar cheese and bacon bits.
