Ingredients
  

Pasta and Chicken
  • 12 oz Fettuccine pasta or pasta of choice
  • 1 lb Chicken breast diced
  • 2 tbsp Olive oil for cooking chicken
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
Cowboy Butter Sauce
  • 1/2 cup Unsalted butter melted
  • 2 tbsp Garlic minced
  • 1 tbsp Paprika smoked or regular
  • 1 tbsp Parsley chopped, for garnish
  • 1/2 cup Heavy cream for creaminess
  • 1/4 cup Parmesan cheese grated

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta and set aside.
Prepare the Chicken
  1. In a skillet, heat olive oil over medium heat. Season the diced chicken with salt and pepper.
  2. Add the chicken to the skillet and cook until golden brown and cooked through, about 7-10 minutes.
Make the Cowboy Butter Sauce
  1. In a bowl, combine melted butter, minced garlic, paprika, and heavy cream. Mix well.
  2. Stir in the grated Parmesan cheese until smooth.
Combine and Serve
  1. Add the cooked pasta and chicken to the skillet. Pour the cowboy butter sauce over the top.
  2. Toss everything together, adding reserved pasta water as needed to reach desired consistency.
  3. Garnish with chopped parsley and serve immediately.

Notes
