Method
Cook the Pasta
- Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente.
- Reserve 1 cup of pasta water, then drain the pasta and set aside.
Prepare the Chicken
- In a skillet, heat olive oil over medium heat. Season the diced chicken with salt and pepper.
- Add the chicken to the skillet and cook until golden brown and cooked through, about 7-10 minutes.
Make the Cowboy Butter Sauce
- In a bowl, combine melted butter, minced garlic, paprika, and heavy cream. Mix well.
- Stir in the grated Parmesan cheese until smooth.
Combine and Serve
- Add the cooked pasta and chicken to the skillet. Pour the cowboy butter sauce over the top.
- Toss everything together, adding reserved pasta water as needed to reach desired consistency.
- Garnish with chopped parsley and serve immediately.
