Fill a shallow dish with warm water. Take one rice paper wrapper and submerge it in the water for about 10 seconds until it becomes soft but not overly mushy.
Lay the softened rice paper on a clean surface. Place a small amount of lettuce followed by your choice of vegetables, herbs, and protein in the center. Fold in the sides first and then roll from bottom to top tightly but gently.
In a small bowl, combine soy sauce (or tamari), lime juice, and optional chili flakes. Whisk until well mixed.
