  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 cups frozen corn or fresh corn kernels
  • 2 cups potatoes peeled and diced
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth low sodium recommended
  • 1 cup heavy cream or half-and-half
  • 1 tsp dried thyme
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Prepare the Ingredients
  1. In a crockpot, add the diced chicken, corn, potatoes, onion, and garlic.
  2. Pour in the chicken broth and stir to combine.
Season and Cook
  1. Add thyme, salt, and pepper to the crockpot.
  2. Cover and cook on low for 6 hours or high for 3 hours.
Finish the Chowder
  1. About 30 minutes before serving, stir in the heavy cream.
  2. Taste and adjust seasoning if necessary.
Serve
  1. Ladle the chowder into bowls and enjoy warm.
