Ingredients
  

  • 1 cup chopped greens typically a mix of romaine
  • 1 cup tomatoes sliced or chopped
  • 1 cup cucumber sliced or chopped; seeds can be removed if desired
  • 1 cup corn canned, frozen, or fresh
  • 1 cup bell peppers sliced thin or chopped small
  • 1 cup red onions sliced thin
  • 1 cup green onions sliced thin
  • 1 cup protein options ground beef, turkey, chicken, hard boiled eggs, canned tuna, cooked shrimp, etc.
  • 1 cup beans black, kidney, or pinto beans
  • 1 cup cheese shredded, diced, or crumbled
  • 1 cup avocado sliced or diced
  • 1 cup fruits diced apples, pears, orange slices, or fresh berries
  • 1 cup crunchy extras croutons, tortilla chips, or Fritos
  • 1 unit fresh lime
  • to taste unit salt
  • to taste unit pepper
  • to taste unit salad dressing of your choice

Method
 

  1. Wash all vegetables thoroughly. Chop greens into bite-sized pieces and prepare other veggies as desired.
  2. Cook proteins like ground beef, turkey, or chicken, seasoning them with Mexican spices if desired.
  3. In a large bowl, layer chopped greens first, then add tomatoes, cucumbers, corn, bell peppers, and onions.
  4. Add prepared proteins and any extra toppings like beans and cheese, along with crunchy elements.
  5. Squeeze fresh lime over the salad, season with salt and pepper, and drizzle with dressing just before serving.
  6. Gently toss all ingredients until well combined and serve immediately.
