Ingredients
  

Chicken Marinade
  • 1 pound boneless chicken thighs cut into bite-sized pieces
  • 1 cup coconut milk full-fat for creaminess
  • 2 tablespoons lemon juice freshly squeezed
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Sauce
  • 2 tablespoons coconut oil for cooking
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 inch ginger grated
  • 1 can crushed tomatoes 14 ounces
  • 1 cup coconut milk for sauce
  • 1 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon sugar to balance acidity
Garnish
  • 2 tablespoons fresh cilantro chopped

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine chicken, coconut milk, lemon juice, garam masala, cumin, coriander, turmeric, salt, and pepper. Mix well and let marinate for at least 20 minutes.
Cook the Chicken
  1. Heat coconut oil in a large skillet over medium heat. Add the marinated chicken and cook until browned and cooked through, about 10-15 minutes. Remove the chicken and set aside.
Prepare the Sauce
  1. In the same skillet, add chopped onion and sauté until translucent, about 5 minutes. Add garlic and ginger, cooking for another minute until fragrant.
  2. Stir in crushed tomatoes, coconut milk, cayenne pepper, and sugar. Bring to a simmer and cook for 10 minutes, allowing flavors to meld.
Combine and Serve
  1. Return the cooked chicken to the skillet and stir to coat in the sauce. Cook for an additional 5 minutes. Garnish with fresh cilantro before serving.
