Ingredients

  • 1⅓ cups warm water
  • cups bread flour
  • ¼ cup brown sugar
  • cup cocoa powder
  • ½ cup active sourdough starter
  • 2 tsp salt
  • 1 cup chocolate chips

Method

  1. In a large mixing bowl, combine warm water, active sourdough starter, brown sugar, cocoa powder, and salt.
  2. Gradually add in the bread flour while stirring until a shaggy dough forms.
  3. Turn out your dough onto a lightly floured surface and knead for about 10 minutes until it's smooth and elastic.
  4. Gently fold in the chocolate chips until evenly distributed.
  5. Place your dough back into the mixing bowl and cover it. Allow it to rise at room temperature for about an hour until it doubles in size.
  6. Gently deflate your dough on a floured surface and shape it into a loaf. Transfer your shaped dough into a greased loaf pan.
  7. Cover your loaf again and let it rise for another hour or until puffy.
  8. Preheat your oven to 375°F (190°C).
  9. Once risen, place the loaf in the preheated oven and bake for approximately 45 minutes until it's golden brown on top.
  10. After baking, carefully remove the loaf from the pan and let it cool completely on a wire rack before slicing.
