Dump-and-Bake Chicken Tzatziki Casserole

Ingredients
  

Casserole Base
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup uncooked white rice or brown rice
  • 2 cups chicken broth low sodium preferred
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Tzatziki Sauce
  • 1 cup Greek yogurt plain
  • 1 medium cucumber grated and drained
  • 2 cloves garlic minced
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt to taste
Topping
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped

Method
 

Prepare the Casserole
  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the chicken, rice, chicken broth, oregano, garlic powder, salt, and pepper. Mix well.
  3. Transfer the mixture to a greased 9x13 inch baking dish, spreading it evenly.
Make the Tzatziki Sauce
  1. In a separate bowl, mix together the Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt until well combined.
Assemble and Bake
  1. Spread the tzatziki sauce over the chicken and rice mixture in the baking dish.
  2. Sprinkle the crumbled feta cheese on top.
  3. Cover the dish with aluminum foil and bake for 30 minutes.
  4. Remove the foil and bake for an additional 10 minutes, or until the chicken is cooked through and the top is golden brown.
Serve
  1. Garnish with fresh parsley before serving. Enjoy your meal!

Notes
