Ingredients
  

Stuffed Peppers
  • 4 pieces bell peppers any color
Filling
  • 1 pound ground beef or turkey
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 packet taco seasoning
  • 1 cup salsa your choice of heat
  • 1 cup shredded cheese cheddar or Mexican blend

Method
 

Prepare the Peppers
  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. Place the peppers upright in a baking dish.
Cook the Filling
  1. In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes.
  2. Stir in the black beans, corn, taco seasoning, and salsa. Cook for another 5 minutes until heated through.
Stuff the Peppers
  1. Spoon the beef mixture into each bell pepper, packing it down slightly.
  2. Top each stuffed pepper with shredded cheese.
Bake
  1. Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
  2. Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and golden.
Serve
  1. Remove from the oven and let cool for a few minutes before serving.
