Ingredients
  

Chicken and Gnocchi
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 16 oz gnocchi store-bought or homemade
  • 2 tbsp olive oil for cooking
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Garlic Sauce
  • 4 cloves garlic minced
  • 1 cup chicken broth low sodium
  • 1 cup heavy cream or half-and-half
  • 1/2 cup parmesan cheese grated
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

Cook Chicken
  1. In a large skillet, heat olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 6-8 minutes.
  2. Remove the chicken from the skillet and set aside.
Prepare Gnocchi
  1. In the same skillet, add the gnocchi and cook according to package instructions until they float to the top, about 2-3 minutes. Drain and set aside.
Make Garlic Sauce
  1. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  2. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and parmesan cheese, cooking until the sauce thickens slightly, about 3-5 minutes.
Combine and Serve
  1. Return the cooked chicken and gnocchi to the skillet, stirring to coat in the sauce. Cook for an additional 2-3 minutes until heated through.
  2. Garnish with fresh parsley before serving.

Notes
