Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon molasses
Coating
  • 1 cup powdered sugar

Method
 

Prepare the Dough
  1. In a mixing bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  2. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and molasses until well combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Shape and Bake
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Using a cookie scoop, form the dough into 1-inch balls and place them on the prepared baking sheet.
  3. Bake for 12-15 minutes until the edges are set but the centers are still soft.
  4. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a cooling rack.
Coat with Sugar
  1. While the cookies are still warm, roll them in powdered sugar until fully coated.
  2. Allow the cookies to cool completely before serving.
