Ingredients
  

Marinade
  • 500 grams chicken breast cut into cubes
  • 200 grams yogurt plain, for marinating
  • 2 tablespoons garam masala spice blend
  • 1 teaspoon cumin ground
  • 1 teaspoon coriander ground
  • 1 teaspoon turmeric
  • 1 teaspoon salt to taste
  • 1 tablespoon lemon juice
Sauce
  • 2 tablespoons oil vegetable or canola
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1 inch ginger fresh, grated
  • 1 can crushed tomatoes 400 grams
  • 1 cup heavy cream
  • 1 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon sugar to balance acidity
  • 2 tablespoons fresh cilantro chopped, for garnish

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine chicken cubes, yogurt, garam masala, cumin, coriander, turmeric, salt, and lemon juice. Mix well and marinate for at least 30 minutes, preferably overnight.
Cook the Chicken
  1. Preheat the grill or oven to medium-high heat. Thread the marinated chicken onto skewers and grill for about 10-15 minutes, turning occasionally, until cooked through and slightly charred.
Prepare the Sauce
  1. In a saucepan, heat oil over medium heat. Add chopped onion and sauté until golden brown. Stir in garlic and ginger, cooking for another minute until fragrant.
  2. Add crushed tomatoes, cayenne pepper, and sugar. Simmer for 10 minutes, allowing the sauce to thicken.
  3. Stir in heavy cream and cooked chicken. Simmer for an additional 5 minutes, adjusting seasoning if necessary.
Serve
  1. Garnish with fresh cilantro and serve hot with rice or naan.

Notes
