Ingredients
  

Protein
  • 1 lb ground turkey lean
Vegetables
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 cup green beans trimmed and cut
Liquids
  • 4 cups chicken broth low sodium
  • 1 cup water
Spices
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Ingredients
  1. Chop the onion, garlic, carrots, and celery. Trim and cut the green beans.
Cook the Turkey
  1. In a large pot, heat a little oil over medium heat. Add the ground turkey and cook until browned, about 5-7 minutes.
Add Vegetables
  1. Add the chopped onion, garlic, carrots, and celery to the pot. Cook for another 5 minutes until the vegetables are softened.
Combine Ingredients
  1. Pour in the chicken broth and water. Add the green beans, thyme, oregano, salt, and pepper. Stir well.
Simmer the Soup
  1. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
Serve
  1. Taste and adjust seasoning if necessary. Serve hot.
