Prepare the Chicken and Vegetables
- Place the chicken strips, sliced onion, green bell pepper, red bell pepper, and minced garlic in the crockpot.
- Pour the chicken broth over the top and sprinkle with Italian seasoning and black pepper.
Cook the Mixture
- Cover and cook on low for 6 hours or high for 3 hours until the chicken is cooked through and tender.
Assemble the Sandwiches
- Once cooked, shred the chicken in the crockpot using two forks and mix with the vegetables.
- Place a portion of the chicken and vegetable mixture on each sub roll and top with a slice of provolone cheese.
- Optional: Place the assembled sandwiches under a broiler for 2-3 minutes to melt the cheese.
