Ingredients
  

Chicken and Vegetables
  • 1 lb boneless skinless chicken breasts cut into strips
  • 1 medium onion sliced
  • 1 medium green bell pepper sliced
  • 1 medium red bell pepper sliced
  • 2 cloves garlic minced
  • 1 cup low-sodium chicken broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon black pepper
Cheese and Buns
  • 4 slices reduced-fat provolone cheese
  • 4 whole grain sub rolls or sandwich buns

Method
 

Prepare the Chicken and Vegetables
  1. Place the chicken strips, sliced onion, green bell pepper, red bell pepper, and minced garlic in the crockpot.
  2. Pour the chicken broth over the top and sprinkle with Italian seasoning and black pepper.
Cook the Mixture
  1. Cover and cook on low for 6 hours or high for 3 hours until the chicken is cooked through and tender.
Assemble the Sandwiches
  1. Once cooked, shred the chicken in the crockpot using two forks and mix with the vegetables.
  2. Place a portion of the chicken and vegetable mixture on each sub roll and top with a slice of provolone cheese.
  3. Optional: Place the assembled sandwiches under a broiler for 2-3 minutes to melt the cheese.
