Ingredients
  

Soup Base
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 can diced tomatoes with green chilies
  • 2 cups chicken broth or vegetable broth
  • 1 packet taco seasoning or homemade
  • 1 cup cooked shredded chicken or ground turkey
  • 1 cup heavy cream or coconut cream for dairy-free
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream or Greek yogurt
  • 1 medium avocado diced
  • 1/4 cup cilantro chopped
  • 1 medium lime cut into wedges

Method
 

Prepare the Soup
  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in black beans, corn, diced tomatoes, chicken broth, taco seasoning, and shredded chicken. Bring to a simmer.
  4. Reduce heat and stir in heavy cream. Let simmer for 15-20 minutes, stirring occasionally.
Serve
  1. Ladle the soup into bowls and top with shredded cheese, sour cream, diced avocado, and chopped cilantro.
  2. Serve with lime wedges on the side for squeezing over the soup.

Notes
