Prepare the Soup
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Stir in black beans, corn, diced tomatoes, chicken broth, taco seasoning, and shredded chicken. Bring to a simmer.
- Reduce heat and stir in heavy cream. Let simmer for 15-20 minutes, stirring occasionally.
Serve
- Ladle the soup into bowls and top with shredded cheese, sour cream, diced avocado, and chopped cilantro.
- Serve with lime wedges on the side for squeezing over the soup.

For a vegetarian version, omit the chicken and use vegetable broth. You can also add additional vegetables like bell peppers or zucchini for extra nutrition.
