Homemade Ciabatta Bread

Ingredients
  

Dough Ingredients
  • 500 g bread flour high protein content
  • 400 ml water room temperature
  • 10 g salt sea salt preferred
  • 2 g instant yeast or active dry yeast
For Dusting
  • 50 g semolina flour for dusting

Method
 

Prepare the Dough
  1. In a large mixing bowl, combine the bread flour, instant yeast, and salt.
  2. Gradually add the water while mixing with a wooden spoon until a shaggy dough forms.
  3. Cover the bowl with plastic wrap and let it rest for 12-18 hours at room temperature.
Shape the Bread
  1. After the dough has risen, lightly flour a work surface and turn the dough out onto it.
  2. Gently stretch and fold the dough into a rectangle, then divide it into two pieces.
  3. Shape each piece into a loaf and place them on a baking sheet lined with parchment paper, dusted with semolina flour.
Final Rise
  1. Cover the loaves with a kitchen towel and let them rise for about 1 hour.
Bake the Bread
  1. Preheat the oven to 220°C (425°F).
  2. Bake the loaves for 25-30 minutes until golden brown and hollow sounding when tapped.
  3. Remove from the oven and let cool on a wire rack before slicing.
