Prepare the Marinade
- In a mixing bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, minced garlic, grated ginger, black pepper, and sesame oil until well combined.
Marinate the Chicken
- Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.
Grill the Chicken
- Preheat the grill to medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the remaining marinade.
- Place the chicken on the grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
Serve
- Remove the chicken from the grill and let it rest for a few minutes. Garnish with chopped green onions before serving.
