Ingredients
  

Marinade
  • 1 cup soy sauce low sodium preferred
  • 1/2 cup brown sugar packed
  • 1/4 cup ketchup
  • 1/4 cup pineapple juice fresh or canned
  • 2 cloves garlic minced
  • 1 tablespoon ginger freshly grated
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon sesame oil
Chicken
  • 4 pieces chicken thighs bone-in, skin-on preferred
  • 1 tablespoon green onions chopped for garnish

Method
 

Prepare the Marinade
  1. In a mixing bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, minced garlic, grated ginger, black pepper, and sesame oil until well combined.
Marinate the Chicken
  1. Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the remaining marinade.
  2. Place the chicken on the grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
Serve
  1. Remove the chicken from the grill and let it rest for a few minutes. Garnish with chopped green onions before serving.

Notes
