Ingredients
  

  • 4 pieces boneless beef chops
  • 1 large onion sliced very thin
  • 1 medium honeycrisp apple thin slices
  • to taste salt
  • to taste black pepper
  • 1/2 cup apple butter
  • 1/2 cup water
  • 2 tbsp whole grain mustard
  • 1 sprig fresh rosemary optional
  • 3 leaves fresh sage optional

Method
 

  1. Gather all your ingredients, slice your onion and apple thinly.
  2. Season both sides of each beef chop with salt and black pepper.
  3. Heat a skillet over medium-high heat, add oil, and sear the beef chops for 3–4 minutes on each side.
  4. Remove chops, add sliced onions and apples to the pan, and cook until softened, about 5 minutes.
  5. Incorporate apple butter, water, and mustard into the pan, stir well, and bring to a gentle simmer.
  6. Return the beef chops to the skillet, add rosemary or sage if using, cover, and simmer for another 10 minutes.
  7. Plate the beef chops with the sauce and serve with your favorite sides.
