Cook the chicken breast using your preferred method. Allow it to cool before shredding and chopping it into small pieces.
Chop the celery, green onions, and jalapenos.
In a large bowl, combine the shredded chicken with diced celery, sliced green onions, chopped jalapenos, crumbled bacon, cottage cheese, and shredded cheddar cheese. Stir well.
In a food processor or blender, combine all of the dressing ingredients and blend until smooth.
Pour the jalapeno dressing over your salad mixture and toss gently until well coated.
