Ingredients
  

  • 1 large Chicken Breast
  • 3/4 cup Cottage Cheese
  • 2 Celery Stalks diced
  • 2 Green Onions sliced
  • 1/2 cup Shredded Cheddar Cheese
  • 3 tbsp Chopped Fresh Jalapeno
  • 5 slices Bacon cooked and crumbled
  • 1/2 cup Sour Cream
  • 1/4 cup Chopped Fresh Jalapeno
  • 1/4 cup Fresh Cilantro
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Salt
  • 2 Limes Juice of

Method
 

  1. Cook the chicken breast using your preferred method. Allow it to cool before shredding and chopping it into small pieces.
  2. Chop the celery, green onions, and jalapenos.
  3. In a large bowl, combine the shredded chicken with diced celery, sliced green onions, chopped jalapenos, crumbled bacon, cottage cheese, and shredded cheddar cheese. Stir well.
  4. In a food processor or blender, combine all of the dressing ingredients and blend until smooth.
  5. Pour the jalapeno dressing over your salad mixture and toss gently until well coated.
  6. Serve your salad over fresh greens, on keto bread, or enjoy it as is!
