Prepare the dough by following your easy no-knead pizza dough recipe until step five, including shaping the pizza and preheating your oven.
If using fresh mozzarella packed in water, slice it into half-inch thick pieces and dab dry with a paper towel to prevent sogginess.
Place the dough onto parchment paper and shape it into a 9x13 inch rectangle, then transfer to a pizza peel or baking sheet.
In a glass jar, combine olive oil, water, chopped parsley, grated garlic, lemon zest, lemon juice, salt, and black pepper. Shake until emulsified.
Make dimples in the dough and drizzle the brine over it, then scatter mozzarella pieces on top.
Transfer the pizza to the preheated pizza stone and bake for about 8–10 minutes until the cheese and crust are browned.
Drizzle fresh lemon juice on top, add parmesan cheese and parsley, and serve warm.
