Prepare the Fries
- Wash and peel the potatoes, then cut them into thin strips.
- Soak the potato strips in cold water for at least 30 minutes to remove excess starch.
Fry the Potatoes
- Heat the oil in a fryer to 350°F (175°C).
- Drain the potatoes and pat them dry with paper towels.
- Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch.
- Remove fries from the oil and drain on paper towels.
Season the Fries
- In a mixing bowl, combine the Cajun seasoning, garlic powder, onion powder, paprika, black pepper, and salt.
- While the fries are still hot, sprinkle the seasoning mix over them and toss to coat evenly.
Assemble the Voodoo Fries
- Place the seasoned fries on a baking sheet.
- Sprinkle shredded cheddar cheese over the fries.
- Broil in the oven for 2-3 minutes until the cheese is melted.
- Top with sliced green onions, sour cream, and hot sauce before serving.
