Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts sliced into strips
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 2 tablespoons olive oil for cooking
Orzo and Sauce
  • 1 cup orzo pasta uncooked
  • 1 cup Marsala wine sweet
  • 2 cups chicken broth low sodium
  • 1 cup mushrooms sliced
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 cup fresh spinach roughly chopped
  • 1 tablespoon butter for finishing

Method
 

Cook the Chicken
  1. Season the chicken strips with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the chicken and cook until browned and cooked through, about 6-8 minutes. Remove from skillet and set aside.
Prepare the Orzo
  1. In the same skillet, add mushrooms and garlic, sautéing for about 3-4 minutes until mushrooms are tender.
  2. Add the orzo, Marsala wine, and chicken broth. Stir to combine.
  3. Bring to a boil, then reduce heat to low, cover, and simmer for about 10-12 minutes, or until orzo is tender.
Finish the Dish
  1. Stir in the cooked chicken, spinach, thyme, and butter. Cook for an additional 2-3 minutes until spinach is wilted.
  2. Adjust seasoning with salt and pepper if needed.
  3. Serve warm, garnished with additional thyme if desired.
