Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 tablespoons olive oil for cooking
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Rice
  • 1 cup long-grain rice uncooked
  • 2 cups chicken broth or water
  • 1 tablespoon lemon juice for flavor
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion thinly sliced
  • 1 cup kalamata olives pitted and sliced
  • 1/4 cup feta cheese crumbled
Garnish
  • 2 tablespoons fresh parsley chopped
  • 1 lemon wedges for serving

Method
 

Cook the Chicken
  1. In a large skillet, heat olive oil over medium heat. Add chicken pieces and season with garlic powder, paprika, oregano, salt, and pepper. Cook until chicken is browned and cooked through, about 8-10 minutes.
  2. Remove chicken from skillet and set aside.
Prepare the Rice
  1. In a pot, bring chicken broth to a boil. Add rice and lemon juice, reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and liquid is absorbed.
  2. Fluff the rice with a fork and set aside.
Assemble the Bowl
  1. In serving bowls, layer the rice, followed by the cooked chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  2. Garnish with chopped parsley and serve with lemon wedges.
