Method
Cook the Chicken
- In a large skillet, heat olive oil over medium heat. Add chicken pieces and season with garlic powder, paprika, oregano, salt, and pepper. Cook until chicken is browned and cooked through, about 8-10 minutes.
- Remove chicken from skillet and set aside.
Prepare the Rice
- In a pot, bring chicken broth to a boil. Add rice and lemon juice, reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and liquid is absorbed.
- Fluff the rice with a fork and set aside.
Assemble the Bowl
- In serving bowls, layer the rice, followed by the cooked chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- Garnish with chopped parsley and serve with lemon wedges.
