Ingredients
  

Chicken Marinade
  • 1 lb boneless, skinless chicken thighs cut into strips
  • 3 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1/2 cup cucumber grated and drained
  • 1 clove garlic minced
  • 2 tbsp feta cheese crumbled
  • 1 tbsp olive oil
  • 1 tbsp lemon juice freshly squeezed
  • 1 tbsp fresh dill chopped
  • 1/2 tsp salt
Gyro Assembly
  • 4 pita bread whole wheat or regular
  • 1 cup mixed greens
  • 1 tomato sliced
  • 1 small red onion thinly sliced
  • 1/2 cup kalamata olives sliced

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Add chicken strips and toss to coat. Cover and marinate for at least 30 minutes.
Prepare Tzatziki Sauce
  1. In a bowl, mix Greek yogurt, grated cucumber, minced garlic, crumbled feta, olive oil, lemon juice, chopped dill, and salt until well combined. Refrigerate until ready to use.
Cook the Chicken
  1. Preheat the grill to medium-high heat. Grill the marinated chicken strips for about 5-7 minutes on each side or until fully cooked and no longer pink.
Assemble the Gyros
  1. Warm the pita bread on the grill for 1-2 minutes. Layer mixed greens, grilled chicken, sliced tomato, red onion, and kalamata olives on each pita. Drizzle with tzatziki sauce and serve.

Notes
