Mini Chocolate Chip Muffins

Ingredients
  

  • 1 cup plain full fat Greek yogurt
  • ¼ cup unsalted butter melted and slightly cooled
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup maple syrup
  • 1 ½ cups all-purpose flour
  • 1 cup mini chocolate chips

Method
 

  1. Whisk together the flour, salt, baking soda, and baking powder in a mixing bowl.
  2. In a separate bowl, whisk together the Greek yogurt, maple syrup, vanilla extract, and melted butter. Add in the eggs and whisk until smooth.
  3. Add the dry ingredients into the wet mixture and gently stir until just combined.
  4. Fold in the mini chocolate chips until evenly distributed.
  5. Spray a mini muffin pan with nonstick spray.
  6. Distribute the muffin batter evenly into each muffin cup and sprinkle additional chocolate chips on top if desired.
  7. Bake at 350°F (175°C) for about 12–14 minutes or until a toothpick comes out clean.
  8. Allow the muffins to cool in the pan for 2–3 minutes before transferring to a wire rack.
