Ingredients
  

  • 8 ounces pasta linguine, fettuccine, or your choice
  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 8 ounces mushrooms sliced (cremini or button)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • salt to taste
  • pepper to taste
  • fresh parsley chopped (for garnish)
  • extra Parmesan cheese for serving

Method
 

  1. Start by bringing a large pot of salted water to a boil. Once boiling, add your chosen pasta and cook according to package instructions until al dente. Drain the pasta when done, reserving about half a cup of the pasta water for later use.
  2. In a large skillet over medium heat, combine olive oil and butter. Once melted and shimmering, add minced garlic and sauté for about one minute until fragrant. Then, add sliced mushrooms and cook until they are tender. Next, toss in the shrimp; cook just until they turn pink and opaque.
  3. Reduce the heat slightly before adding heavy cream and grated Parmesan cheese to the skillet. Stir well until everything is combined smoothly. If the sauce seems too thick, gradually add some reserved pasta water until you reach your desired consistency.
  4. Add the drained pasta into the skillet with your creamy shrimp mixture. Toss everything together gently until all strands are coated in that delicious sauce. Season with salt and pepper according to your taste preferences.
  5. Serve your Mushroom Garlic Shrimp Pasta hot, garnished with fresh parsley and extra Parmesan cheese if desired.
