Start by adding the no stir creamy peanut butter, honey, rolled oats, vanilla protein powder, salt, and mini chocolate chips to a mixing bowl. Mix everything together until well combined.
Grab a mini cookie scoop or a spoon and drop small mounds of the mixture onto a wax paper-covered cookie sheet, aiming for about 1 inch in size.
Roll each mound gently between your hands to form perfectly round energy balls.
Place the cookie sheet with your energy bites into the refrigerator for about an hour to harden slightly.
Transfer the energy balls into a Ziploc bag for storage. They will stay fresh in the fridge for around a week or can be frozen for up to 2–3 months.
