Ingredients
  

Sausage and Rice
  • 1 lb smoked sausage sliced
  • 1 cup long-grain rice uncooked
  • 2 cups chicken broth low-sodium
  • 1 cup bell pepper diced
  • 1 small onion diced
  • 1 cup corn frozen or canned
  • 1 cup BBQ sauce sweet and tangy variety
  • 1 tbsp olive oil for cooking

Method
 

Cook the Sausage
  1. In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5 minutes.
  2. Remove the sausage from the skillet and set aside.
Sauté Vegetables
  1. In the same skillet, add the diced onion and bell pepper. Sauté until softened, about 3-4 minutes.
Combine Ingredients
  1. Stir in the rice, chicken broth, corn, and BBQ sauce. Bring to a boil.
  2. Reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and liquid is absorbed.
Finish the Dish
  1. Return the cooked sausage to the skillet, stir to combine, and heat through for an additional 2-3 minutes.
  2. Serve hot and enjoy!
