Ingredients
  

Chicken and Tortellini
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 pkg fresh cheese tortellini about 9 oz
  • 2 cups chicken broth low sodium preferred
Spices and Seasonings
  • 4 cloves garlic minced
  • 1 tsp red pepper flakes adjust to taste
  • 1 tsp Italian seasoning
Butter and Garnish
  • 4 tbsp unsalted butter divided
  • 1/4 cup fresh parsley chopped for garnish
  • 1/2 cup parmesan cheese grated for serving

Method
 

Cook the Chicken
  1. In a large pot, melt 2 tablespoons of butter over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  2. Remove the chicken from the pot and set aside.
Prepare the Sauce
  1. In the same pot, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant.
  2. Stir in the chicken broth and Italian seasoning, bringing it to a simmer.
Cook the Tortellini
  1. Add the tortellini to the pot and cook according to package instructions, usually about 3-5 minutes until tender.
  2. Return the cooked chicken to the pot and stir to combine.
Serve
  1. Remove from heat and garnish with chopped parsley and grated parmesan cheese before serving.

Notes
