Ingredients
  

Salmon and Orzo
  • 4 fillets salmon skinless
  • 1 cup orzo uncooked
  • 2 cups chicken broth low sodium
  • 1 tablespoon olive oil for cooking
  • 1 lemon zest and juice fresh
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/4 cup fresh parsley chopped for garnish

Method
 

Cook the Orzo
  1. In a pot, bring chicken broth to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
Sear the Salmon
  1. In a large skillet, heat olive oil over medium-high heat. Season the salmon fillets with salt, pepper, and oregano. Sear the salmon for about 4-5 minutes on each side until cooked through and golden brown. Remove from skillet and set aside.
Combine Ingredients
  1. In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Add the cooked orzo, lemon zest, and lemon juice. Stir to combine and heat through.
Serve
  1. Return the salmon to the skillet, nestling it into the orzo. Garnish with chopped parsley and serve immediately.

Notes
