Prepare the Noodles
- Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a mixing bowl, combine ricotta cheese, 1/2 cup mozzarella cheese, pepperoni, and Italian seasoning.
Assemble the Roll Ups
- Spread 1/2 cup of marinara sauce on the bottom of a baking dish.
- Take a lasagna noodle, spread a generous amount of the cheese mixture on it, then roll it up tightly. Place seam-side down in the baking dish.
- Repeat with remaining noodles and cheese mixture.
Bake the Roll Ups
- Pour the remaining marinara sauce over the rolled lasagna. Sprinkle the remaining mozzarella and parmesan cheese on top.
- Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let cool for a few minutes before serving.
