Ingredients
  

Lasagna Roll Ups
  • 12 sheets lasagna noodles cooked and drained
  • 2 cups ricotta cheese part-skim
  • 1 cup mozzarella cheese shredded
  • 1 cup pepperoni slices cut in half
  • 2 cups marinara sauce divided
  • 1 teaspoon Italian seasoning
  • 1/2 cup parmesan cheese grated

Method
 

Prepare the Noodles
  1. Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  2. In a mixing bowl, combine ricotta cheese, 1/2 cup mozzarella cheese, pepperoni, and Italian seasoning.
Assemble the Roll Ups
  1. Spread 1/2 cup of marinara sauce on the bottom of a baking dish.
  2. Take a lasagna noodle, spread a generous amount of the cheese mixture on it, then roll it up tightly. Place seam-side down in the baking dish.
  3. Repeat with remaining noodles and cheese mixture.
Bake the Roll Ups
  1. Pour the remaining marinara sauce over the rolled lasagna. Sprinkle the remaining mozzarella and parmesan cheese on top.
  2. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  3. Let cool for a few minutes before serving.
