Ingredients
  

Potato Mixture
  • 4 medium potatoes peeled and cubed
  • 1 cup cheddar cheese shredded
  • 1 egg large egg beaten
  • 1 cup all-purpose flour
  • 1 cup bread crumbs for coating
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Frying
  • 2 cups vegetable oil for frying

Method
 

Prepare Potatoes
  1. Boil the cubed potatoes in a large pot of salted water until tender, about 15 minutes.
  2. Drain and let cool slightly, then mash the potatoes in a mixing bowl.
Mix Ingredients
  1. Add the shredded cheddar cheese, beaten egg, flour, salt, and pepper to the mashed potatoes. Mix until well combined.
Shape and Coat
  1. Form the potato mixture into sticks or logs.
  2. Coat each stick in bread crumbs, pressing gently to adhere.
Fry the Sticks
  1. Heat the vegetable oil in a frying pan over medium heat.
  2. Fry the potato sticks in batches until golden brown and crispy, about 3-4 minutes per side.
  3. Remove and drain on paper towels.
Serve
  1. Serve hot with your favorite dipping sauce.

Notes

These potato cheese sticks can be made ahead of time and frozen before frying. Just fry them straight from the freezer, adding a couple of extra minutes to the cooking time.
