Method
Prepare the Puff Pastry
- Preheat the oven to 375°F (190°C). Roll out the puff pastry on a floured surface and cut into squares large enough to fit into the muffin tin.
- Place the puff pastry squares into the muffin tin, pressing them into the bottom and up the sides.
Make the Pecan Filling
- In a mixing bowl, combine the chopped pecans, brown sugar, corn syrup, beaten egg, vanilla extract, and salt. Mix well until combined.
Assemble and Bake
- Spoon the pecan filling into each puff pastry cup, filling them about 3/4 full.
- Brush the edges of the pastry with melted butter and sprinkle with sugar.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the filling is set.
Cool and Serve
- Allow the pecan pie bites to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
- Serve warm or at room temperature. Enjoy!
