Ingredients
  

Puff Pastry
  • 1 sheet puff pastry thawed if frozen
Pecan Filling
  • 1 cup pecans chopped
  • 1/2 cup brown sugar packed
  • 1/4 cup corn syrup light or dark
  • 1 large egg beaten
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
For Topping
  • 1 tablespoon butter melted
  • 1 tablespoon sugar for sprinkling

Method
 

Prepare the Puff Pastry
  1. Preheat the oven to 375°F (190°C). Roll out the puff pastry on a floured surface and cut into squares large enough to fit into the muffin tin.
  2. Place the puff pastry squares into the muffin tin, pressing them into the bottom and up the sides.
Make the Pecan Filling
  1. In a mixing bowl, combine the chopped pecans, brown sugar, corn syrup, beaten egg, vanilla extract, and salt. Mix well until combined.
Assemble and Bake
  1. Spoon the pecan filling into each puff pastry cup, filling them about 3/4 full.
  2. Brush the edges of the pastry with melted butter and sprinkle with sugar.
  3. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the filling is set.
Cool and Serve
  1. Allow the pecan pie bites to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
  2. Serve warm or at room temperature. Enjoy!
