Pumpkin Pie Cookie Recipe

Thick, chewy cookies infused with warm spices and topped with a smooth pumpkin pie filling.

Ingredients
  

  • 2 ⅔ cups all-purpose flour
  • 1 tablespoon pumpkin spice
  • ½ teaspoon salt
  • 3 oz cream cheese room temperature
  • 12 tablespoons unsalted butter room temperature
  • ½ cup granulated sugar
  • ½ cup brown sugar packed
  • 1 large egg yolk room temperature
  • 1 teaspoon vanilla extract
  • cup coarse sugar for rolling
  • 1 large egg room temperature
  • ¼ cup brown sugar
  • pinch table salt
  • ½ teaspoon pumpkin spice
  • ¼ cup whole milk
  • ½ cup pumpkin puree
  • ¼ teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F and line a cookie sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, pumpkin spice, and salt until combined.
  3. In a large mixing bowl, beat together the room temperature butter, cream cheese, granulated sugar, and brown sugar until light and fluffy.
  4. Add in the egg yolk and vanilla extract, mixing until smooth.
  5. Gradually mix in your dry ingredients until just combined.
  6. In another bowl, whisk together the egg, brown sugar, pinch of salt, pumpkin spice, whole milk, pumpkin puree, and vanilla extract until smooth.
  7. Scoop out generous portions of cookie dough and roll in coarse sugar before placing them on your prepared cookie sheet.
  8. Make an indentation in each cookie dough ball and spoon some of the pumpkin filling into each indentation.
  9. Place the cookie sheet in your preheated oven and bake for about 15 minutes or until lightly golden around the edges.
