Method
Prepare the Dough
- In a mixing bowl, combine warm water and yeast. Let it sit for 5 minutes until frothy.
- Add flour, salt, and olive oil to the yeast mixture. Stir until a shaggy dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth.
First Rise
- Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 1 hour or until doubled in size.
Shape and Second Rise
- Preheat the oven to 425°F (220°C).
- Transfer the dough to a greased baking sheet and stretch it out to fit the pan.
- Dimple the surface with your fingers, drizzle with olive oil, and sprinkle with sea salt and rosemary.
- Let the dough rest for another 20 minutes.
Bake the Focaccia
- Bake in the preheated oven for 20-25 minutes until golden brown.
- Remove from the oven and let cool slightly before slicing.
