Start by peeling and cubing the sweet potatoes.
In a skillet over medium heat, add olive oil and allow it to warm up. Add the sausage and brown it for about 5-7 minutes.
Add the sweet potato cubes into the skillet and stir them in, letting them cook alongside the sausage for another 5 minutes.
In a small bowl, mix together honey, minced garlic, soy sauce, paprika, salt, and pepper. Pour this over the sausage and sweet potatoes.
Cover the skillet and let everything simmer for about 10 minutes.
Garnish with fresh parsley before serving.
