  • 1 lb Italian sausage sliced
  • 2 medium sweet potatoes peeled and cubed
  • 1 tbsp olive oil for cooking
  • 1 cup bell pepper diced
  • 1 cup onion diced
Honey Garlic Sauce
  • 1/4 cup honey
  • 3 tbsp soy sauce low sodium
  • 2 cloves garlic minced
  • 1 tbsp apple cider vinegar
  • 1/2 tsp ginger grated

Method
 

Prepare the Ingredients
  1. Peel and cube the sweet potatoes, dice the bell pepper and onion, and slice the sausage.
  2. In a small bowl, mix together the honey, soy sauce, minced garlic, apple cider vinegar, and grated ginger to create the sauce.
Cook the Sausage and Vegetables
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced sausage and cook until browned, about 5-7 minutes.
  3. Add the diced onion and bell pepper, cooking for an additional 3-4 minutes until softened.
  4. Stir in the cubed sweet potatoes and cook for about 10 minutes, stirring occasionally.
Add the Sauce
  1. Pour the honey garlic sauce over the sausage and sweet potato mixture.
  2. Stir well to combine and cook for another 5-7 minutes, or until the sweet potatoes are tender.
Serve
  1. Remove from heat and serve warm, garnished with fresh herbs if desired.
