Prepare the Ingredients
- Peel and cube the sweet potatoes, dice the bell pepper and onion, and slice the sausage.
- In a small bowl, mix together the honey, soy sauce, minced garlic, apple cider vinegar, and grated ginger to create the sauce.
Cook the Sausage and Vegetables
- Heat olive oil in a large skillet over medium heat.
- Add the sliced sausage and cook until browned, about 5-7 minutes.
- Add the diced onion and bell pepper, cooking for an additional 3-4 minutes until softened.
- Stir in the cubed sweet potatoes and cook for about 10 minutes, stirring occasionally.
Add the Sauce
- Pour the honey garlic sauce over the sausage and sweet potato mixture.
- Stir well to combine and cook for another 5-7 minutes, or until the sweet potatoes are tender.
Serve
- Remove from heat and serve warm, garnished with fresh herbs if desired.
