Wash and chop the potatoes into bite-sized pieces. Toss them with olive oil, salt, pepper, garlic powder, and paprika.
Place the seasoned potatoes in the bottom of your slow cooker.
Season the chicken breasts generously with salt, pepper, paprika, onion powder, and Italian seasoning.
Lay the seasoned chicken on top of the potatoes.
Spread minced garlic evenly over the chicken.
Pour enough Buffalo Wild Wings Garlic Parmesan Sauce over the chicken to coat it thoroughly.
Cover your slow cooker and set it on low for 6–7 hours or high for 3–4 hours until both chicken and potatoes are cooked through and tender.
In the last 30 minutes of cooking, sprinkle shredded mozzarella cheese over everything.
Serve warm, garnished with extra Parmesan or fresh herbs if desired.
