Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Vegetables
  • 1 cup chopped onion
  • 2 cups chopped bell peppers any color
  • 1 cup chopped zucchini
Sauce
  • 1 cup chicken broth
  • 1 cup crushed tomatoes canned or fresh
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup feta cheese crumbled, for serving

Method
 

Prepare Ingredients
  1. Chop the onion, bell peppers, and zucchini into bite-sized pieces.
  2. Season the chicken breasts with salt, pepper, garlic powder, and oregano.
Layer in Slow Cooker
  1. Place the chopped vegetables at the bottom of the slow cooker.
  2. Add the seasoned chicken breasts on top of the vegetables.
  3. Pour the chicken broth and crushed tomatoes over the chicken.
Cook
  1. Cover and cook on low for 6 hours or on high for 3 hours.
Serve
  1. Once cooked, shred the chicken with two forks and mix it back into the sauce.
  2. Serve hot, topped with crumbled feta cheese.
