Cook the Pasta
- In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare the Sausage and Vegetables
- In a skillet, heat olive oil over medium heat. Add the sliced Cajun sausage and cook until browned, about 5-7 minutes.
- Add the diced onion, sliced bell peppers, and minced garlic to the skillet. Sauté until the vegetables are tender, about 5 minutes.
Make the Sauce
- Pour in the heavy cream and chicken broth, then stir in the Cajun seasoning, salt, and black pepper. Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
Combine and Serve
- Add the cooked pasta to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes until heated through.
- Serve hot, garnished with grated parmesan cheese.
