Ingredients
  

Pasta and Sausage
  • 12 oz penne pasta or any pasta of choice
  • 1 lb Cajun sausage sliced
  • 1 tbsp olive oil for cooking
  • 1 medium yellow onion diced
  • 1 medium red bell pepper sliced
  • 1 medium green bell pepper sliced
  • 3 cloves garlic minced
Sauce
  • 1 cup heavy cream for creaminess
  • 1 cup chicken broth low sodium
  • 2 tbsp Cajun seasoning adjust to taste
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1/4 cup parmesan cheese grated, for serving

Method
 

Cook the Pasta
  1. In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare the Sausage and Vegetables
  1. In a skillet, heat olive oil over medium heat. Add the sliced Cajun sausage and cook until browned, about 5-7 minutes.
  2. Add the diced onion, sliced bell peppers, and minced garlic to the skillet. Sauté until the vegetables are tender, about 5 minutes.
Make the Sauce
  1. Pour in the heavy cream and chicken broth, then stir in the Cajun seasoning, salt, and black pepper. Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
Combine and Serve
  1. Add the cooked pasta to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes until heated through.
  2. Serve hot, garnished with grated parmesan cheese.

Notes

Feel free to adjust the spice level by adding more or less Cajun seasoning. You can also add other vegetables like spinach or mushrooms for extra flavor.
