- Add the spring mix to a large bowl. Toss in the sliced cucumber, halved cherry tomatoes, chopped onion, avocado pieces, fresh herbs, and feta cheese.
- Drizzle the apple vinegar vinaigrette along the outer top portion of the ingredients in the bowl. Gently fold everything together.
- Season your salad with salt and freshly cracked black pepper according to your preference.
- If preparing homemade dressing, add all dressing ingredients into a blender and blend until smooth.
- Store leftovers in a tightly sealed mason jar in the refrigerator for up to a week.
